Nice and easy Japanese style curry on rice for dinner
Ingredients
1 Onion minced
2 Potatoes
1 Carrot
1 Eggplant
1/2 Zucchini
1 Capsicum
1 Tomato
1 Tbsp vegetable oil/ olive oil
540ml of water
1 Pack of S&B Golden Curry Mix Mild 92g or Medium hot/ Hot (optional)
Preparation
Cut potatoes, carrot, eggplant, zucchini, paprika and tomatoes into bite-sized pieces.
Stir-fry onions with oil in a large skillet. Add other vegetables and stir-fry. Add water and simmer until ingredients are tender.
Turn the heat off, break S&B Golden Curry Mix into pieces and add them to the skillet. Stir until mixes are completely melted.
Simmer until thickened, stirring constantly.
Serve with noodles or Mama San sushi rice
